ShinyFraga's Microwave Berry (or Peach) Cobbler Mug

Ingredients:

~ 2 Tbsp. Splenda for baking
~ 2 Tbsp. flour
~ 1/4 to 1/2 tsp. baking powder
~ 4 oz. mixed berries (if berries are tart, sweeten with more Splenda until as sweet as you like)
~ 1 Tbsp. light margarine
~ 2 Tbsp. fat free milk

Preparation:

Melt margarine in large microwaveable mug.
Add Splenda, flour, baking powder, and milk to margarine.
Whisk well.
Add fruit on top of batter.
Cook on HIGH for 2 minutes.

(Just replace the berries with a 4 oz. snack size container of peaches for peach cobbler.)

Let cool for a few minutes and enjoy!

Makes 1 serving at 172 calories.

    thanks! I enjoy coming up with yummy things to eat that aren't super high in calories. because I love food WAY too much to settle for anything less than yummy, lol!

    This sounds great! What kind of consistency is the pastry when this is done? I've never tried such a thing in the microwave.

    if you cook it until a toothpick comes out of the cake part clean (only 2 minutes in my microwave) it is nearly the same consistency as a cobbler baked in the oven.

    I made these Saturday night with peaches (my husband's favorite) and they were really good! I topped them with 2 TBSP of Fat Free Cool Whip. I will definitely do this again!

    I have just made this. I put raspberries on the top and it was absolutely delicious.
    Will be making this regularly now with a variety of toppings.
