I’m am a picky eater myself! I have been hiding vegetables in everything I can! I make Mac and cheese and put puréed butternut squash, carrots, and cauliflower in the cheese sauce. I’ve also been adding finely chopped zuchini and carrots to turkey burgers and then adding a tbsp of marinara and 1/8 cup of mozzarella cheese! My favorite thing lately has been flatout bread I use it to make thin crust pizzas that are under 300 calories! I also use flatout bread for chicken quesadillas and dip it in plain nonfat Greek yogurt! It’s really good!

It would be easier to give suggestions if you would share what they don't like.

Are we talking kids or grown adults? If they are kids, why are you giving them options? A healthy kid will not starve themselves. Aside from a few things (super spicy foods and sushi) our kids are expected to eat what we make.

If they are adults, they can fend for themselves, can't they?

For kids, I make dinner and that's what for dinner period. I don't go out of my way to make something they hate and I can do slight modifications to theirs but otherwise I make one meal. For an adult? I do work around some of my husbands issues which can be annoying (certain things hurt his stomach or whatever) but for the most part I just make what I want. If he doesn't like it he can eat a sandwich.
