Fiesta Crock Pot Chicken

                    I got this recipe from a coworker... YUMMY!!!
2-4 boneless, skinless chicken breasts
1 can black beans, drained & rinsed
1 can corn, with liquid
1 jar of salsa, as mild or hot as you choose
Put all ingredients in crock pot. Cook on low for 7-8 hours. Shred chicken, return to crock pot, and serve with chips or as a meal with tortillas and any other toppings you choose.

            I made something like this the other day except it was with the following extras
 Chopped onions
 Chopped bell peppers
 garlic
 Jalapenos (I put in lots-I like it HOT)
 ground cumin & smoked spanish paprika
 Fresh chopped coriander (cilantro)
 Nommmmmm!!!0

            I made this in my crockpot a few months ago. I was surprised how good it tasted! Even my kids liked it. I provided extra salsa and sour cream at the table. I think I also made brown rice to go with it. You could even use tortillas.0

            I took chicken out of the freezer for dinner tonight and I was looking for a recipe for something different. I'm going to try this when I get home. Guess I'll have to put it in the oven though...the crock pot would have been easier!0

            I make this too. My kids love it as a filling for quesadillas....when can have a few extra cals...I use it as a taco filling...also good over lettuce like a taco salad.0

 I only ever eat white rice. But I may try this for dinner tonight. It just so happens that I put some chicken in the crockpot this morning and have no idea yet what I am going to do with it. Thanks for the unsolicited suggestion. Apparently, you have the ability to read minds. :laugh:0
