Vegan Recipes?

Heya guys, just wondering if anyone has any really great/easy/cheap/low fat recipes that don't include animal products? I'm starting a vegan diet in October but am a terrible cook, and I'll be living alone then, so I'll need to get in some vegan cooking practice before then!

I'll eat just about anything, but if anyone has a great bean burger recipe I'd love to hear it.

    I made these and absolutely loved them I keept doing it 3-4 times in the past month I was a vegan. My photo turned out beautiful too but I'm at work and its at home/facebook so unfortunately I can't post it.

    I have been vegan for almost two years. :^) I love this website http://fatfreevegan.com/ and have made quite a few things from it. I have also been making recipes from vegetariantimes.com and from my VegNews magazine.

    I've been trying out some of her recipes :) Had the avacado pasta last night and it was soooo good. Healthy fats and protein and completely vegan!

    ‎1/4 cup nutritional yeast, 1/4 cup flour, tsp paprika, tsp salt, dash garlic powder, whisk together with 1 cup water in small pot until smooth, heat on medium until it gets thicker (whisk often to keep smooth or it will become lumpy quick).... bring heat to simmer or take it off completely and add 2 Tbsp of vegan butter. Whisk that till butter melts and is smooth. You can also add 1 cup or so of salsa if desired. Also, you can replace water with unsweetened soymilk to make it a little more creamy.

    This is a recipe for vegan cheese dip. You can also thin it out a little and use it as salad dressing.

    My Favorite Vegan chef right now is Colleen Patrick Goudrea! Her EASY Garlic Green soup is a staple in my house and everyone loves is (v's and non v's alike)! You can youtube it and it will come right up!

    I am also a fan of Vegetarian Times and anything from the Vegan with a Vengeance book by Isa Chandra Moskowitz! Between her book, Colleen's book , "The Vegan Table" and Vegetarian Times.com I have MORE than enough vegan recipes.

    www.peasandthankyou.com. i love this blog, and this blogger just published an amazing book. you can order it from her site or amazon. there is a wonderful black bean burger in there as well as many other fantastic dishes (lasagna,cookies, jambalaya..) well worth it!

    This is amazing. You can skip the salsa and add a little malt vinegar for a more cheddar-y flavor for broccoli or potatoes.

    You should buy "Appetite For Reduction" by Isa Chandra. It is all vegan recipes that are low fat/ healthy, plus there is a nutrtion guide with each recipe. I have made at least 15 recipes and have loved them all! I'm gonna eat the Sweet Chili Lime Tofu tonight!

    I totally recommend her books. Isa and Terry's cookie and cupcake books even have a few low fat recipes.

    Lazy Vegan Crockpot Chili:

    3 cans beans: drained and rinsed (I use two kidney and 1 black bean)
    1 28 oz can crushed tomatoes (I like the fire roasted kind)
    1 can diced tomatoes (Fire roasted! or not)
    1 can tomato paste
    1 small onion diced and sauteed
    1 red bell pepper diced and sauteed
    3-6 Tbs chili powder, depending on your spice tastes (3 or 4 if feeding to children)
    any amount of whatever other spices you want: cajun, cumin, smoked paprika, ancho chili powder, hot sauce...

    Dump in a crock pot and cook on low for 6-8 hours.
    You can also put the veggies in raw but they'll be a little al dente at the end of cooking.

    other options:
    veggie chili: add carrots, corn, greens
    meat-y chili: add mushrooms and/or faux meat. I like the Boca crumbles.
    Chili cheese ____: Daiya or a nutritional yeast sauce!

    Easy Vegan Tomato-dill Soup

    1 can diced tomatoes (Fire roasted is best here too!)
    1 can coconut milk (I use full-fat but lite could be subbed-- might be less thick though)
    1+ Tbs dried dill

    Warm up the diced tomatoes in a stove pot.
    Mash with a potato masher, doesn't need to be smooth unless you want it to be.
    Either skim the solid coconut milk off the top of the can or mix and pour it all in. (It's good both ways and I'm not sure of the caloric difference)
    Mix in the dill and add pepper and salt to taste. I like a lot of dill so I use maybe 3 Tbs.

    Chickpea Salad

    1 can chickpeas, drained, rinsed, mashed
    relish (dill or sweet)
    mustard (any preference)
    Veganaise (there is a low fat version)
    minced onion and/or celery (optional)
    1/2 tsp kelp flakes or dulce flakes (for a fishy taste)

    Mix your desired amounts! It's not really a recipe.

    Awesome Black Bean Burgers:
    Mix together: 2 Cups black beans (smashed with a fork)
    1/2 Cup Vital Wheat Gluten
    1/2 Cup bread crumbs
    1 teaspoon chili powder
    1/2 teaspoon cumin
    1/4 Cup water
    3 Tablespoons ketchup
    1/4 Cup chopped cilantro
    2 cloves chopped garlic
    1/2 small onion, chopped
    Divide in to six balls and flatten in to burgers. Pan fry 5-8 minutes on each side at medium heat OR bake at 375 for 20-25 mins. until cooked through.
