HIDDEN SPINACH MEATLOAF -- fool your kids, fool yourself :)

This is seriously the best meatloaf I have ever made (that might not be saying much). I wrote down everything I put in (what I had in the fridge) and entered the recipe into MFP to get the nutrition info. I added it to the database as "LL Corrected Homemade Spinach BBQ Meatloaf"
So I had a slice of this on a roll with fresh fruit and grilled asparagus for dinner last night. Huge hit with the family and the dinner was 427 cals, total. yum!
HIDDEN SPINACH MEATLOAF - serves 16, on a roll as a sandwich (your mileage may vary).
Calories: 192, Carbs: 14, Fat: 9, Protein: 14, Fiber: <1
Preheat oven to 400 degrees
Saute:
* 1T EVOO
* 1/2 c. chopped onion
* 1/2 c. chopped bell pepper
* 1T minced garlic
Pulse in food processor and add subsequent ingredients a few at a time:
* croutons or toasted bread to make 1 c. bread crumbs
* sauteed veggies (above)
* 2 eggs (I used extra large eggs)
* 5T. ketchup
* 5T. bbq sauce
* 1T. yellow mustard
* 2T. worcestershire sauce
* 2.5 oz. pecorino romano cheese, grated
* 1 large bunch of spinach (about 2 cups)
* 1 lb. ground beef (the nutrition info on this recipe is calculated using "not more than 15% fat ground angus beef", so you could lighten it further with 10 or 7%)
* 1 lb. ground pork (I got a boneless, skinless tenderloin and had the butcher grind it)
press into 8 x 8 baking pan; spread top with sauce:
SAUCE: whisk together:
* 5T ketchup
* 5T bbq sauce
* 1T yellow mustard
* 2T brown sugar
bake for 30-40 minutes until temperature is at least 165 degrees.
serve on a roll with lettuce, tomato, onions, whatever

I do the same thing to meatloaf except I put in carrots. I will have to try it with spinach too or maybe half of each0

zuccini meatless loaf is very tasty as well! You wouldn't even know if there was meat in it, or not. Us Cooks can be sooo sneaky... he he he.... :-)0

I use carrots chopped into TINY pieces in the food processer as often as I can - spaghetti sauce, chili, meatloaf....pretty much any ground beef recipe!0
