I'm looking for some new low carb dinner ideas that I can put together on Sundays for the week. I do a lot of Crock-Pot/casserole meals. I work 10 hour days and if I have to cook too then excersizing doesn't make the cut for my time that day. But I'm bored with my recipes. I need some new ideas please

Chicken breasts with a taco seasoning packet in the crock pot. I like to do taco salad, with just a few chips, salsa, veggies, sour cream, etc..You could also do burritos with a low carb tortilla, or chicken bowls with brown rice.6

I buy chicken breasts or thighs when they're on sale and then pre-cube them and freeze. Its easy to thaw them out and add them to whatever. Chicken noodle soup, chicken curry (Saffron Road Simmer Sauces FTW) and rice, or chicken and veggies roasted on a sheet pan are simple and quick go-to meals.
For the sheet pan veggies, you can use frozen broccoli and cauliflower, or pre-cut some sweet potatoes. Just add a little olive oil, salt, pepper and herbs, then bake on 350 for about 30-40 minutes. Make sure the chicken is 165 degrees.
If I'm tired or short on time, I will just use 5 minute instant rice or those frozen steamer bags of rice. Jasmine or Basmati is much better, but it also takes much longer to prepare. Leftover rice can be refrigerated and used the next day to make quick fried rice.

I like to marinate and grill a ton of chicken breasts. Throughout the week I'll use them on salads or use various sauces or salsas to make them taste a little different each day. Roast a couple pans of vegetables too and then you've got a bunch of meals for the week.4

Turkey meatballs! Mix 2lb turkey in any flavor god or Mrs Dash with egg and 1/4c brown rice or quinoa, I do 3.5oz balls with a side of zucchini or broccoli. Bake or broil turkey balls to your preference of brown. I dip in mustard or hot sauce, but that is preference 😊3

Also meat loaf, meat balls. If you are trying low carb, have these with cauliflower blitzed into a rice like side.

I second meatloaf! We use cupcake pans to make pre-portioned mini meatloaves. Bakes faster too. They freeze quite well after being cooked if you wrap in plastic.1
