Hey guys!
I am over-the-moon in love with salsa, and the way it can take an okay recipe and make it amazing. It's so low calorie for the flavor it gives, too! I don't want to say I'm getting tired of the tomato/onion/chili combo, but it would be nice to switch it up a bit!
Do you guys have any super flavorful, chunky, hearty, low-calorie sauces/salsas/chutneys/etc that you guys enjoy? I'm looking to expand my repertoire!
Thanks bunches. =]

I like this one for a salsa verde

This is the basic one we use for a typical salsa. We will add a couple serranos for some heat. We just throw everything in a food processor which you can make as smooth or chunky as you want that way.

I don't know how you do your salsa but I soften my tomatoes, onion, and chili in boiling water before tossing the blender. Salsa literally translates to sauce, so this salsa sauce for everything - seafood, chicken, steak, etc. For variety, you can roast everything before blending. Salt, pepper, and a smidge of cumin powder are the only seasonings I use. I will also add cilantro. If you have access to Mexican chili, it opens up a lot of variation.
Other variations for chunky salsa include mango, charred pineapple, corn, cucumber, roast eggplant, bell peppers, or watermelon. These can be substitutions or additions.2 -
Mango Salsa is one of my all-time favorites and is excellent on bean burgers!
½ red onion
2 cloves garlic
2 roma tomatoes
1 jalepeno
1 mango, sliced
½ T rice vinegar
1 T dried cilantro
Salt & pepper to taste
Rough chop all ingredients and pulse in food processor.

One of my favs is a green salsa. I oven roast tomatillos, onion and garlic. Then blend with fresh cilantro, olive oil, lime juice, cumin, and salt. The taste is so fresh and delicious.2

I enjoy making a pineapple salsa by grilling slices of pineapple seasoned with salt, pepper and chili powder. Cup up and mix with red onion, jalapenos, cilantro and some lemon juice. Great with grilled fish or pork.2

Khmer lime and pepper sauce has virtually no calories and is shockingly good for something so simple. Great on steak, fried eggs and fish.

Of the herbal green sauces along the lines of salsa verde, gremolata, chimchurri, Israeli zhoug is more sparing with the olive oil, so lower in calories than the others.
