So I bought a couple avocados....

I know they're good for you,but I need some ideas/recipes.

    mash it up and add garlic, diced onions, lime juice, diced tomatoes and use it as a dip, or spread, slice it and put it on salads, sandwiches, etc. Eat it plain.

    I slice them and put them on salads or sandwiches....they are good diced with salsa on salads!
  • I agree you could slice it up in thin slices and add to sandwiches. Or there is always quacamole but no fun if you cant do the chips too.

    got this from south beach, mix in blender with cottage cheese, cilantro, onion, garlic for a tasty dip

  • This morning I had a piece of whole grain toast, spread avocado on it and sliced up a boiled egg. It was filling and lasted me till lunch....and that was with 2 turbo fire workouts after breakfast.
    Also, I agree with using it to replace mayo.

    Cut it in half. Remove pit. Sprinkle with kosher or sea salt. Scrape out green flesh with spoon. Bring spoon to mouth. Chew. Swallow. Delicious!

    When I was a kid, my dad used to fill the hole left by the pit with mayo for me! Gross, no wonder he had a heart attack at 50!

    I like them on a sandwich with chicken salad. I also, made a avacado salsa, with fresh veggies from our garden!

    ohhh, on chicken tortilla soup....get a quart (i think - the boxes at trader joe's or the big cans) of good chicken broth, throw in some black or kidney beans, a container of fresh salsa, some corn (leftover veggies, whatever), some leftover chicken (or shrimp or whatever) and cook it up for a few minutes so the salsa gets hot and all flavory (inventing words!). Serve up a bowl and drop in some chopped cilantro and diced avocado, sprinkle a few chips on top if you must (i don't bother) and YUM!

    OUCH... doesn't chewing the spoon hurt your teeth? just messing. I'm becoming more and more tempted to try an avocado and they are on sale for 1$ at walmart this week...

    MIx together 1 can reduced sodium black beans with 1 can of corn. Generously douse with chipotle Tabasco. Warm up this mixture, about 1 cup of it, and smother your avocado with it. Eat with a spoon. Mmmmmmm
