Buffalo Chicken Meatloaf .... and bonus ranch mashed potatoe

Just served up a juicy and delicious new creation tonight. This dish is half packed with veggies so good for you and very moist. The potatoes were a little indulgence, and using the buttermilk to substitute for a lot of butter keeps them very creamy. You can definitely substitute low fat or fat free ranch dip in the potatoes, I have just been using regular dairy to try to keep it cleaner.

Chicken
Celery, Carrots, Onion
Buffalo Sauce

    To increase the protein in your potatoes, substitute plain Greek yogurt for the sour cream. Same "whang", less calories and more protein!

    AWESOME tip! I also had another friend suggest the ol' cauliflower substitute for the taters. Between that and greek yogurt thats a helluva makeover :bigsmile:

    You can easily use ground turkey, we just had ground chicken on sale at the market so I bought some :bigsmile:

    I love to use the Laughing Cow Blue Cheese wedges whenever I need to add Blue Cheese. It doesn't always work, but for the most part it is great!

    I will have to try that. I have done the LC Blue in mashed potatoes and mac and cheese and it melted perfectly.

    I should explain at I am a Aussie and we don't buffalo sauce here......Where I heard of buffalo wings, I was puzzled as buffalos don't have wings.....

    Ha I was thinking, is she teasing me, or is she just from out of the states :bigsmile: Hot sauce and butter is whats in "buffalo" sauce I think.
