Tired of salad leaves?

At one point I was a complete saladholic. It was what I had everyday for lunch. Any kind of salad. Mixed greens, romaine, iceberg, baby spinach; it didn't matter. Lately the thought of eating one more salad has made me GAG, but I still LOOOOVE the other veggies/fruit I would toss in! Today I tried something new [to me]. I took two medium carrots, peeled the outside layer with my peeler, washed, then proceeded to keep peeling the carrot until there was almost nothing left. I did that to both carrots. I put the 'shavings' in my salad bowl, tossed in my regular veggies. TA DA! A salad without the now-bitter-to-me-taste of salad greens. YUM YUM! It's probably all in my head, but it just seems more filling this way!

I'm a salad lover who has one everyday as well (sometimes 2X). I have not tired of them yet, but I like your tip shredded carrots are yummy and there are a lot of healthy cole slaw recipes that use them.

I hear ya. I can only handle so many raw greens. I try to add them in wraps and other things other than salad.
