Sounds like you need some motivation. Do you have a coach?0

-make sure your calorie goal is not too aggressive. While it's important to be in a deficit to lose weight you also still have to properly fuel yourself
-make sure you're eating a variety of foods that give you a lot of what you need
-stay hydrated
-get adequate rest
-weigh and track accurately, both to help you stay in a deficit and that you're eating enough
-get a check-up at your dr to make sure there's nothing go on1 -

This might be a dumb question, but sometimes it's the most obvious thing that people miss, so... are you getting enough sleep?
It seems odd that after only two days your diet would be causing noticable fatigue. How many lbs do you have to lose, and how many lbs per week did you set yourself to? Did you drastically change how many carbs you're eating?
Would you say you are unusually stressed out about your need to re-lose the weight?
Did you start a new workout program, and if so, what are you doing?
Do you have seasonal allergies? Depending where in the world you are, the pollen is beating the crap out of a lot of us right now! It's spring cold season as well, you could be fighting something off.3 -
In addition to @kimny72's questions, where are you in your menstrual cycle?3

I love what @kimny72 said.
Also, can you tell if you are mentally exhausted, physically, or both? I sometimes say "i'm tired" when I am just mentally spent and it leads me to physically rest. It can also be intimidating to make a change to something like calorie counting, especially if you have been stressing over your weight.
Once you understand why you feel so tired i'm sure a lot of people on here will be able to give you some advice to get through it.4 -
Thanks everyone. I think maybe too much of a drastic change, had something else to eat and I feel loads better. Probably not enough sleep and too much stress but that’s standard for me juggling work and little people.2
