I use rottisserie chicken for dinner one busy nights. Then i either make the leftovers a soup or use them in salads. Here's an example of the salad i did last week with rotisserie chicken leftovers.

    Here's my simplest rotisserie chicken salad hack. Mix up the chicken with a chopped avocado, a jar of commercial salsa, and some chopped coriander. If you aren't avoiding carbs, have it in a soft tortilla.
