Vegan red split lentil curry

2 cups of red split lentils (dry)
1 yellow onion
4 cloves of garlic
1 large can of chopped tomatoes
1 small can of tomato paste
1 yellow bell pepper
2 table spoon curry powder
2 table spoon garam masala
1 table spoon tumeric
2 table spoon garlic powder
1 tsp salt
1 cup of oat milk (you could use coconut but I didnt to cut the fat content)
If you like heat like I do...
1 table spoon cayenne pepper
Green onion to top
You could add caul-rice if you want...this will make alot so be ready for left overs!

So can you not taste the oat milk? I've been not cooking with it because I find the flavor so strong.0

No not at all, the curry, garam masala, garlic, etc...over power any oat taste by far.
It would taste better with the coconut flavour you get from the cocnut milk...but for an easy meal with protein and low in fat it is pretty good imo.1 -

Did I miss the cooking instructions?
Nope, I didn't post them...but here they are.
Cook the lentils to start, the bag they come in will have the instructions. Once they are cooked, drain them and set aside.
Cut up your onion and garlic, toss it into a pan to fry them, (I use water instead of oil so they don't stick to the pan) fry them until they start to brown. Then toss in the bell peppers, tomato paste and the diced tomatoes. Next up is all the spices...now cook until it thickens a bit...and you can really smell all the spices...now toss in the oat milk (or coconut milk).....and the very last add in the lentils and cook all together on simmer for 20 mins stirring occassionally.
