Hoping I could get some of your opinions on what options of side dishes you make that are low carb?

    I just had zucchini, sweet onion and green beans sautéed together—went well with baked chicken. Sometimes I’ll add pepper strips. I do a lot of throw-together veggies.

    Maybe some grilled asparagus, wilted garlic spinach, or mashed cauliflower? I suppose it depends on what the main is.

    I roasted carrots, broccoli, onion, and red peppers for dinner tossed in olive oil and balsamic vinegar for dinner tonight. Great variety and tastes amazing!

    There are lots of veggies that fit well in a low carb diet - broccoli, spinach, kale, celery, cauliflower, zucchinni, cucumbers, peppers. I would avoid things like potatoes (sweet and white), carrots, onions, etc., too many sugars.
