Is there an option to track additional micronutrients when you go premium? Went premium but the tracking hasn't been expanded in any way

Nope. The nutrition information mirrors the information categories available on U.S. nutritional labels. If there are no fields in the database records for other information, there's no way to put it in the database.
Other folks frequently recommend Cronometer if you want to track more micronutrients. I haven't tried it myself.

No. They list the benefits of premium pretty clearly before you sign up. There is additional goal setting ability and increased macro tracking options, but it doesn't expand the database as that information would have had to have been entered by people creating the entries.2
