Questions about 1)calorie deficit and 2)alcohol when weight training

Hi everyone,
I am trying to lose a bit of weight and put on muscle at the same time (currently work out and do cardio on alternate days). Today -- a weight training day -- I hit my protein target, and have 300 calories left for the day, but I'm totally not hungry. Should I put away some fruit or something else to make the calorie limit, so that I'm not starving muscle?
Second, I really want a beer. What's the rule on weight training and then having a beer (as long as the beer is logged and doesn't push you past your nutritional targets? Will the alcohol impede muscle growth?
