Reccomedations I'm different chicken thigh recipes? Stove top or baked.

also:Roasted chicken thighs (I prefer bone-in skin-on but you don't have to eat the skin)
Poached chicken (make sure the liquid you cook it in is seasoned well)
Using ground chicken meat in chili instead of beef (there are a bajillion turkey chili recipes that you could also sub chicken for)
Stir fry (this is one of the few things I'll use chicken breasts for)
Grilled chicken (and there's one of the other applications of chicken breast that I like)

Various curries from around the world (though I'd suspect a lot of the ones with fewer calories would be centered around the Indian subcontinent)

For skinless boneless chicken thighs, I like stir fries. Google video tutorials for skinning and boning thighs if necessary. A typical use is Kung Pao Chicken.

If you think this is too much work here is a dead simple stir fry. It is important to cook the ketchup enough for it to caramelize, as the recipe is otherwise insipid. I think it is improved by letting a glass of red wine bubble off in the caramelized ketchup which adds acidity and complexity. Add a glug of soy or fish sauce if you find the sauce too sweet.

If you skin and debone your chicken thighs use the bones for making stock and make chicken crackling with the skins which is a substitute for bacon crumbles in salads or on top of soups.

My fave right now is lime cilantro , boneless, skinless thighs. With black beans, a small bit of corn, chopped onion, and green onion. I eat this in a low carb wrap. Love it. Sometimes add pico to it4

I use this recipe a lot because it's delicious, but it is written for chicken breasts. I do cook it a lot with chicken thighs but i modify it as follows. I do everything the same until step 3. I do use the toaster oven and turn it on at 400 degrees before i have started cooking the chicken. After step 3 i would stick the tray with the chicken in the toaster oven for about 10 minutes or so.

Sometimes when I am time poor and want something yummy, I just chuck the thighs in an oven proof dish and pour over a jar of Barilla pasta sauce (or any other good quality Italian real pasta sauce - not the fake stuff), a bit of red wine, some extra herbs sprinkled on top, cover with foil and stick it in a low oven until it cooks.
Comes out delicious, with a sauce and the meat melting away.
Other than that, I do chicken curries (curry paste, light coconut cream, vegetables, onions), or sometimes I just chop them into smaller pieces, cover with spices and fry in the non-stick fry pan with no oil - the fat from the chicken will fry the chicken and you get these crispy spicy bite sized yummies.1 -

Can of Cream of mushroom .. then baked..
Chicken adobo.. soy sauce, vinegar and bay leaf.. (Filipino dish) ...brown the chicken , add soy sauce, half cup water and add small amount of vinegar and a leaf or two of bay leaf. Google the recipe. It's fairly easy dish.2 -
