Baked Sweet Potato w/ Spinach

I’ve seen a lot of broccoli or chili topped baked potatoes, but I was craving sweet potatoes and really needed to up my iron. So I threw together this tasty dinner...

1 medium sweet potato
3/4 C fresh baby spinach
1 Tbsp Earth Balance soy free buttery spread (or butter of your choice)
Pink Himalayan Sea Salt
1 Tbsp low fat sour cream
1 Tbsp fresh salsa

Wrap your sweet potato in a moist paper towel and microwave between 8-10 mins. *You want your potato soft enough for a butter knife to cut thru it.* Carefully cut open your cooked potato and smash the inside a bit. Rub the buttery spread (or butter if you prefer) over the inside of the potato. Lightly sprinkle with the Himalayan Salt. Tear your baby spinach and place on your potato. Top with sour cream and salsa.

This was so satisfying that I ate it as a main course. But, depending on your calorie needs, you could enjoy it as a side!

    That sounds pretty good. I usually just eat baked sweet potatoes with a little butter and brown sugar, but I have been looking for ways to increase my iron lately so I may give the spinach a try.

    I'm greek. Love spinach. Never thought to stuff my sweet potato. Sounds delish.
