10 No-Cook Summer Meals to Chill Out a Heat Wave

The heat has broken here; posting this for reference in case my family wants to have hot food on the menu for our annual get together again next year. We have this at my mom's. Only the kitchen has AC and it couldn't keep up with the outside temperature, cooking heat, and oven. The space where we eat does catch a nice breeze, but is not air conditioned.

It's going to be in the 90s next few days. I rarely use the oven this time of year - often my OH grills and I make a starch and vegetable. I think tonight it will be chicken thighs with a spice rub, corn on the cob, and a green salad.0

I love corn done on the grill too. I usually give it the Cambodian treatment.

For busy, on-the-go days I prepare snacks ahead of time in a three part container. I often like dolmades (stuffed grape leaves) in one part, pickle and cheese rolled in turkey sandwich meat in another, and a salad or cold vegetable in the largest. You can use your favorite trail mix, snack pack or almost anything. Great when we’re all day at a baseball game or just running errands and want to avoid the temptation to grab fast food.1
