Who Likes Larabars?

So I bought a giant box of Larabars for like $17, never tried them before, but I was impressed by the ingredient list. (Try "Dates, Walnuts, Apples, Almonds, Raisins, Cinnamon"). Impressive, especially if it tastes good. So I thought I'd try some.

Then I stumbled across a website (there IS a God! haha) that has a recipe for you to make your own.

I'm hooked.

Dump in your food processor:
1 c. Dried Mixed Fruit (I used apples/plums/pears/peaches/figs)
1/3 c. Dates
1 c. Walnuts
1 T. Flax meal (opt)
1 T. Chia seeds (opt)

Shape into bars, if you're aspirational or bored; otherwise press into a pan and cut into bars. I couldnt' stop licking my fingers, and no, I don't have PMS. These are so yummy. I mean, a box of Ghirardelli brownies is top of my list, but who wants that sugar crash?

Yield: 12 bars. 116 cal. 14 carb. 7 goodfat. 2 protein. 3g fiber.

I also made some Brownie Larabars :love: with 2/3 c. almonds, 1 1/3 c. dates, 2 T. coconut butter, 4 T. dark cocoa, 2 T. flax meal, 1 oz. unsweetened chocolate. Perfectly sweet and scrumptious.

And these are vegan - I think?

::edit:: I'm taking that expensive box of bars back to the store. Buying dried fruits and nuts in bulk can go wayyyy farther for those of us on a budget. Woot. Tomorrow (when all 24 of my newly made bars are gone haha) I'm going to try Macademia Craisin or Pecan-Raisin-Cinnamon!!

    Good job on making your own! Those actually sound good!

    Sadly, Larabars are like the only energy bar thing that I absolutely cannot stand. I hate their texture and they just don't taste that great to me. I LOVE Clif bars and some Luna bars are alright as well.

  • I love larabars! They just came out with some yummy new flavors. I have to eat gluten free so this is a great quick choice for me. I like that they have all natural ingredients and there is no crazy stuff!

    Larabars are great. I also like Clif and Luna bars for energy bars. I may have to try making my own, sounds easy enough. Thanks for sharing!

    I bet it's the dates that throw you off. You could probably make them chewier/chunkier depending on what you use as a base. Try raisins in place of dates maybe. Or check out Luna and Clif bars' ingredients and try to adapt. I bet you could make your own bars with a better texture, a fun challenge!

    I just read another recipe for Tiramisu Bars that use Cashews, instant coffee, cocoa, macademias.... I'm going to throw in some peanut butter sometime and hope it doesn't make them hard to form.
