Balsamic Vinaigrette

I've tried a couple of recipes for homemade Balsamic Vinaigrette and haven't been too impressed with my outcome. Does anybody out there have an easy recipe that I could give a try?

1/2 cup EVOO
1/4 cup balsamic vinegar
1 small minced shallot
1 clove minced garlic
1 tsp honey
1 tsp Dijon mustard
Pinch of salt & freshly ground pepper
You can use any herb you like. I have a Greek blend I like.
Combine ingredients and mix thoroughly. Keeps in refrigerator for about 10 days.
I make it in a pint canning jar.2 -
