okay, so its not PASTA, its more like vegetables-sliced-so-thin-they-look-like-pasta...but your mouth wont know the difference, i promise. i read a lot of food blogs, and THIS recipe idea revolutionized the way i look at preparing my veggies, especially when i crave for pasta!

Wash the vegetables (zucchini, squash, and carrot), then dry. Peel the entire vegetable
Use a julienne peeler to form noodle shapes from the zucchini, squash, and carrot.
Steam the noodles.
Once cooked, place the noodles in a bowl and top with freshly grated parmesan cheese and some lemon juice.
takes about 15 minutes to go from refrigerator to plate, its totally worth it, and a LOT less calories than regular pasta. BON APPETITE!

zuchini works really well with just a reg peeler, you get fettucini shaped noodles. You dont need to cook the noodles so its great if your looking to add more raw to your diet. topped with any sauce they are super yummy! especially with marinated mushroom! YUM (also raw)0

I do this with zucchini & carrots. It's so good & I feel totally a okay with eating 2 zucchini's to myself.
I boil mine, then press out the water, then cook it up for a bit with butter or olive oil then add sauce. mmm.0 -
