I was feeling creative at dinner today, and I have to say, this turned out DELICIOUS!


Ingredients:
1 lb. lean ground beef (or turkey)
3 C. uncooked white rice (Kraft Minute Rice)
1 1/2 C. white mushrooms, raw (sliced)
2 cobs corn (or 1 small can, drained, your preference)
1 packet taco seasoning (Old El Paso Hot and Spicy, or your preference)
1 C. Hunt's Tomato Sauce (Onion, Herbs and Spices, or your preference)
water
shredded cheese, sour cream, salsa, hot sauce (optional)


Directions:
1) Brown beef with a bit of water in a large skillet or electric frying pan. Drain. Return to skillet and add taco seasoning (follow directions on packet)
2) Saute mushrooms in a very small amount of water in a small frying pan. Cut kernels off of the corn cobs, and add to mushrooms in the pan to further separate kernels/heat it up. Drain.
3) Prepare rice according to package directions.
4) Once beef and rice are done, add the mushrooms and corn to the large beef skillet and mix well. Add the rice and tomato sauce, and stir well (and carefully, depending on how full your pan is!).
5) Dish out into bowls - this makes around 8 servings of ~1 1/2 cups (great for leftovers for lunch at the office or tomorrow's dinner). Feel free to add a bit of shredded cheese, sour cream, hot sauce, or your other favorite taco additions, then mix well and ENJOY!


**If you follow the directions (no added oils or sprays), a serving (around 1 1/2 C of the rice/beef mixture) will come to 302 calories (double check if you are using different brands/meats/etc). Make sure you count any extra toppings/condiments you decide to add!
