What to do with leftover roast?!

Does anyone have any amazing ideas about what to do with leftover roast besides make a sandwich? :ohwell:

I have these two ideas to contribute....

Beef Pho Soup (TOTALLY DELICIOUS)

    "shephard's" pie

    Thin layer of beans
    layer of chopped or ground meat mixed with minced sauted onions
    layer of carrots
    sometimes we'd do peas or something in my house
    pour a "healthy" gravey
    layer of mashed potatoes (can substitute mashed cauliflower
    bake at 375 until mash turns light brown and a little crispy

    I'd shred it into a skillet with dry taco seasoning, water, salsa and black beans and make stuffing for tacos. :bigsmile:

    Cut in chunks, put in a pot with some veggie stock (not covering the meat, about two inches up the side of the pot) and jalapeno, garlic, cumin, onion, and a little tequila or beer, lime and cilantro. Simmer until liquid absords and stir ocassionally. The meat will shred and voila, healthy taco meat!!!
