Easy and on a Budget

Hey I was looking for recipe ideas for my family of 5. I have 3 little ones that are picky eaters but am trying to keep giving them healthy stuff so they grow to like it. I also would like to have budget friendly recipes.... I am trying to eat on a budget because with 4 boys in my house they all eat a lot so where ever i can save I will take it!!

Oh here is one I thought I would share...
Spinach Mozzerella Burgers

Makes 4 burgers
1 pound hamburger (I use ground turkey)
half a bag frozen spinach thawed and drained
1/2 cup of mozzerella
1 packet liptons mushroom and garlic soup mix

Combine everything together with hands (FUN lol) and then seperate and make into 4 equal burgers and grill!


I use Sara Lee's whole wheat thin buns and put lettuce onions and tomatoes on my burger and kids actually like it!

    My favorite money saver is MY CROCKPOT! What is it about a crockpot that makes everything yummy. Throw in some chicken and pretty much any canned soup, BBQ sauce, or even just some broth and you are ready to go. A favorite in our house is chicken with a couple of cans of cream of mushroom soup over the top, served with rice or noodles. Super fast!

    Meatless Mondays are a good way to go, too.... plus it lets you enjoy a higher cal side item that you might normally skip, like some cheesy potatoes with a side or two of steamed veg.

    Make your own soup, it's money saving and goes along way. Stir fry is always good full of veggies and such.. Italian food like lasagna, or just pasta is good too!

    I grew up in a meat/potato/veggie family --- I still go back to this eating style anytime I need to lose weight. And I find that my nieces love it also. I really do just grill up (or broil) some lean protein, add frozen veggies and a naked or near naked potato of some sort (mashed made with non fat greek yogurt, "french fries" baked with a little olive oil, or baked topped with salsa or non fat greek yogurt.

    I buy in bulk and on sale. Most frozen veggie bags can be gotten for $1 a bag or under. Potatoes are budget friendly. When lean cuts of meat go on sale, I buy in bulk and freeze.

    Sounds overly simple, and it is. But it works for both my waistline and my pocket book. It's when I go outside of the basics that I get myself in trouble.

    I ate my mother out of house and home in high school. A favorite of ours was a giant homemade chicken soup with onions and carrots and beets and a whole mess of other stuff, but the key was she'd make bisquik dumplings on top of the soup. It's a very inexpensive and very tasty (at least in my opinion) dinner. The dumplings aren't the healthiest in the world, but they aren't horrible for you.


    Tuna casserole also goes a very long way. Cooked whole wheat pasta covered in tuna and cream of mushroom soup. Throw it in the oven and your done. (Please note, I'm not picking ultra healthy recipes I have because you said your family was very picky).

    CAULIFLOWER PIZZA CRUST!!!!!!!!!!!!!!!!! Google it, you won't regret it.

    Last one I can think of right now is lemon chicken. tenderize the chicken, poke a bunch of fork holes in it. Coat all the pieces with lemon. Place tin foil on you pan, dump the chicken in, then cover with more tin foil, bake, about 10-20 minutes before it's done uncover the chicken so the outside gets a bit crisp.
