no gluten

A friend of mine is coming over for dinner. I want to make her and her BF something wonderful and AMAZING. She cannot eat any gluten d/t celiac's disease but I don't want to spend all my life in the kitchen making 1 meal. Also, I am trying to loose weight so a low cal and gluten free recipes would be amazing. Thanks!

    How about a simple meat and veggies, potato, salad, etc...

    You could make spaghetti with rice noodles, or you could make a soup and salad... throw a roast with veggies in the crock pot works for me, I have my friend over for dinner all the time, and he's gluten free...

    I have Celiac and when I was first diagnosed I had real problems trying to figure out what to eat, but now I find it very easy to plan meals. Roast a chicken, stuff it with a rice and veggie dressing, grill fish, chicken, steaks, you can also grill corn or asparagas, All veggies are OK. Chicken or beef fajitas or tacos on corn tortillas, any kind of salad as long as you don't serve croutons, be careful of the salad dressing, nothing with soy sauce in it as it contains wheat, read the label or make your own dressing. Fruit for dessert ...easy once you get over the feeling you are being deprived. I'm sure you guests will love what you fix for them and will be so appreciative that you have considered their diets. Be careful when buying any prepared foods, I cannot stress enough to read the labels carefully.
