Why are polyunsaturated and monounsaturated fats considered bad in the MyFitnessPal App?

They are not. It's just a glitch they've never bothered to fix. There's no daily reference value for PFA and MFA approved by the governmental organizations they consulted when setting up the framework for assessing your nutrients on MFP, and instead of assigning some kind of N/A value as the reference value, or disabling the function for comparing your intake to a reference value for those nutrients, they set the reference value to zero.
If you have some value you want to set it to, you can edit it in your settings.9 -
They aren't. It shows red because there is not a recommended daily allowance. MUFA/PUFA are good for health, especially omega 3s. If you limit anything, then it should be highly processed omega 6 oils.5
