Chicken and Veggie "Alfredo" Pasta (picture)
2 oz Barilla Plus penne
1 frozen breaded chicken breast from Trader Joe’s
A couple of asparagus spears
Handful of green beans
Handful of sliced mushrooms
1 Laughing Cow Herb and Cheese wedge
Bake chicken at 475 for about 10ish minutes. While chicken is in the oven, boil penne until al dente. Chop up asparagus and green beans, saute with mushrooms. Season with salt and pepper. When pasta is done, drain, and add the wedge of Laughing Cow to hot pasta. Cheese should melt. Cut up chicken, add chicken and veggies to pasta. Toss to coat. Enjoy!
