    Barbeque sauce! it sounds weird, but Famous Dave's sweet and Zesty bbq sauce on tilapia is soooo good! I serve it with some steamed broccoli. Yum!

    I had tilapia last night.

    I season it with garlic, sazon, adobo and black pepper
    i add 1 tsp of olive oil to a sautee pan.
    I chopped onions, red/green peppers and cilantro
    i sauteed ubtil veggies were soft.

    OMG so delish... and very easy..

    I also made eggplant chips.

    slice small eggplant very thin
    season with pepper, garlic and onion power and a dash of curry if you have.
    I did fry them in olive oil .
    awesome taste and the kids loved them ....

    Jamacan Jerk Grilled Tilapia (my dinner last night)

    Place thawed fillets on a sheet of heavy duty aluminum foil that has been sprayed with non stick spray.
    Sprinkle fillets with garlic powder & your choice of Jamacan Jerk rub or seasoning.
    Squeeze 1/2 a lime over fillets.
    I cut the tops of a few lemon grass stalks on the top of my fillets, then loosly gathered the aluminum foil up around the fish (not closed tight)
    Grill til done... I just checked it & pulled it from the grill when it was fully cooked through - but not dry)

    Top with fresh pineapple/peach salsa (adding a dash of the same jamacan jerk seasoning to the salsa that I'd put on my fillets)

    AMAZING! I'm making it again tonight!

    I have a great Tilapia recipe that I make all the time, except I bake it instead of pan frying. It calls for creole seasoning, which you can make on your own with spices you may already have.

    I love throwing a tilapia filet in a glass dish sprayed with olive oil spray and then just sprinkle paprika on top of the filet. Bake for about 15 minutes. Then serve it with some steamed rice, sauteéd spinach & chopped garlic. The flavors are so yummy.
