Anyone have a low calorie low sodium recipe

    Here is one you might try.

    Crockpot Creamy Tomato Basil Soup

    6 Tomatoes, peeled, seeded, and diced
    14 fresh Basil leaves
    1 tsp salt
    1 tsp pepper
    6 c Tomato juice
    2 c Heavy cream
    1/2 c cup Butter

    Put the first 5 ingredients into a crockpot and cook 5-6 hours on low. Stir in the cream and butter, heat til melted and then serve.

    If you don't want it creamy i'm sure you could leave out the cream and butter.

    You can also replace the heavy cream with lite coconut milk or with half and half.

    1 T olive oil
    1 onion, roughly chopped
    2 lbs tomatoes, roughly chopped
    4 cloves
    3 cloves of garlic
    1 boullion cube
    2 ½ c water
    ½ tsp dried parsley
    2 tbsp butter
    2 tbsp flour
    1/2 tsp sugar
    salt, pepper and cayenne to taste

    No cream and still super delicious!

    The youtube page has directions- You can even just use cooking spray to sautee the onion.

    i roast 5 romas
    one container of chicken broth(low sodium if desired)
    basil to taste (handful of leaves)
    garlic to taste (couple of cloves)
    black pepper
    1 leek or half an onion
    salt to taste
    combine
    puree

    i don't like tomato soup really. but i like this.
    i sometimes add mozzarella or make a mozzarella with basil grilled cheese to go with

    Yeah, I wouldn't consider a soup with 2 cups of heavy cream and a half cup of butter to be low calorie, which is what OP asked for, and OP should check the label on the tomato juice to see if it fits their idea of low sodium, which they also asked for.
