i need a quick low cal vegan cupcake recipe
it would be good if it was easy and the ingredients weren't too out there
like i would like to make some tonight!

I don't have a recipe, but we buy a mix at the grocery store that is delicious. It is called guiltless gourmet ooey gooey brownie mix and in the health food section at our store. It is vegan and gluten free and if you use applesauce instead of oil, they only have 90 calories a serving. Then I use a muffin pan to make them into cupcakes instead of browines. Add a scoop of soy icecream over a hot cupcake and yummy!

I've spent about a 30 minutes trying to find any vegan cupcake recipe with the nutrition facts but this is all I got. Not very low in cals though.

I have the recipe to Isa Chandra's "Sexy Low-Fat Vanilla Cupcakes". It's in her "Vegan Cupcakes Take Over The World" Cookbook. I don't have the calorie count, but they seem pretty low cal to me.
Ingredients-
1/2 cup vanilla soy yogurt
2/3 cup vanilla or plain soymilk
1/4 cup applesauce
3 tablespoons canola oil
3/4 cup granulated sugar
1 and 1/2 teaspoons vanilla extract
1 and 1/4 cup all purpose flour
2 tablespoons cornstarch
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1. Preheat the oven to 350F and line a muffin pan with cupcake liners.
2.In a large bowl, whisk together yogurt, soy milk, applesauce, oil, sugar and vanilla.
3. Sift in flour, cornstarch, baking powder, baking soda and salt. Mix it together.
4 Fill cupcake liners three-quarters full.
5. Bake 22 to 24 minutes untill a knife or toothpick inserted throught the center comes out clean.
6. Transfer to a cooling rack and cool completely.
I made these before and even my non vegan friends thought they were great! Enjoy!0
