Egg whites

Not really a recipe but you can scramble them with ham and cheese, or make an omelet. I made an omelet this morning with one egg and one egg white, cheese and spinach. Delish!5

I typically "scramble" them in the microwave with some baby spinach and then eat with a spoon full of salsa on top. Sometimes I will do an omelet with fresh veg.2

Try whipping 3 of them in a stiff meringue with .25 tsp cream of tartar, a splash of vanilla and fold in one scoop the no-sugar flavored protein powder of choice (chocolate? vanilla?) and then make drops on parchment paper on a cookie sheet and bake them for about 20 minutes at 350. Enjoy with coffee or tea.3

Egg whites bake well. Crustless quiches with endless veggie options. You can do a half bell pepper filled with black beans, cheese, and tomato. You can also do a breakfast tart. I made one with asparagus, leeks, and cheese on a crescent roll dough in a casserole dish.2

I make egg white bakes every Sunday. Total of 9 and eat 3 as a meal for 150 calories and 20g protein.
Get out the muffin tin
27 tbsp Kroger break free egg whites (3 per muffin)
54g Jimmy Dean turkey sausage crumbles
27 g cheese
Diced jalapeno or serrano pepper
Roasted mushrooms
Put the eggs in the tins, then the other ingredients and top with cheese. Bake 375 for 12-15 minutes
I'll also make omelets with the egg whites or scramble and eat on toast

Sometimes I put raw egg whites in my leftovers (depending on the dish), and microwave the bowl, forming a protein packed egg white casserole.0
