Pumpernickel bread recipes?

Anyone have any good pumpernickel bread recipes?
I'm looking at https://www.kingarthurflour.com/recipes/classic-pumpernickel-bread-recipe but am not sure about the potatoes. I have rye flour which I assume I can use in place of the pumpernickel. I'd also like to use a higher proportion of wheat to rye flour.
I'm also looking at https://redstaryeast.com/recipes/dark-pumpernickel-rye-bread/ but am slightly prejudiced against recipes that do not include weights. I can convert, of course, but it makes a recipe less desirable.
Rather than using a loaf pan, I'd prefer to use the Dutch oven method. I'm also fine with a recipe that uses less yeast and needs to rise longer than the example ones.

I bake this as a loaf instead of rolls, https://www.kingarthurflour.com/recipes/potato-onion-rye-rolls-recipe. It's lighter in whole grain than I usually make, at some point I need to try subbing some whole wheat for some of the white.1

@Bookworm1860 Ooo, rolls are easier for me to moderate and they freeze so well!
What do you use for the potato flour / potato flakes?
Do you think I can use bread flour instead of the all purpose flour and vital wheat gluten?0 -

I made this recipe last weekend - they were very good! I was in a hurry at the supermarket and could not find the French onions so left them out. I'm used to only buying those at Thanksgiving, when they are featured on end caps. I think they'd make a nice savory addition, so will look harder before I make them again.
King Arthur image using a crown bread pan instead of a 9x13" pan. I don't have the hang of making yeast rolls round, so mine were a lot less perfect, but we didn't care.
