Roasted Garlic Caulflower- 118 Calories!

Yum!
2 tablespoons minced garlic
3 tablespoons olive oil
1 large head cauliflower, separated into florets
1/3 cup grated Parmesan cheese
salt and black pepper to taste
1 tablespoon chopped fresh parsley ( I used dry)

Preheat the oven to 450 degrees F (220 degrees C). Grease a large casserole dish.
Place the olive oil and garlic in a large resealable bag. Add cauliflower, and shake to mix. Pour into the prepared casserole dish, and season with salt and pepper to taste.
Bake for 25 minutes, stirring halfway through. Top with Parmesan cheese and parsley, and broil for 3 to 5 minutes, until golden brown.

118 calories, 8.2g of fat (but its healthy fat!)

    Sounds so good, how much do you get per serving?

    Its six servings, and each serving is roughly a cup. I had 2 cups and a lean cuisine for lunch. My lunch was under 400 calories, I feel stuffed!

    Its 118 calories PER serving, because of the parm cheese and olive oil.
  • cauliflower is my enemy. I just cant seem to get use to the taste, but I love Garlic! I'll have to try this :)

    Thankyou for this. I had roasted cauliflower tonight for the first time. No cheese for me as I'm vegan so I had some mint sauce instead. Mmm....
