Yummy Soup!

I saw this recipe yesterday on Food Network, and I hesitantly decided to try it today. Oh my goodness it was amazing! It doesn't taste like greens at all to me. My 2 year old even ate it and asked for more! I made a few easy changes to it. I used whole milk instead of cream, and I used onions and garlic instead of shallot. I also used only half of the recommended amount of chicken broth (accidentally), and it came out so thick and creamy! The soup was so tasty, I didn't even need the cheese! I plan to make a whole bunch of it and freeze it for easy meals later!
With my changes, it comes out to only 130 calories per serving, and it's very satisfying!
