huge meal only 432 calories

me and my hubby have eaten dinner,lunch and there is one more serving and the whole thing was 432 calories and the fat is only 1.
1 red bell pepper
1 medium zucchini
1 can diced tomatoes
1/2 can of tomato paste (use less if you want less of a tomato-y taste)
1 medium onion
3 cups eggplant (cubed small)
4 tsp of minced garlic
1 cup squash
2 tbsp basil
peper, salt and red pepper flakes to taste
2 tbsp water
preheat oven at 400
mix all ingredients in large bowl until all veggies are covered in tomato paste.
put LARGE piece of heavy duty tin foil in front of you and scoop veggie mixture into the center of the foil. Fold and seal the top and bottom edges of the foil, and then the side edges, to create a well-sealed pack.
place packet on a baking sheet and cook 40-60 minutes or until veggies are tender.
SOO delicious!! and chances are you'll have leftovers I suggest high fiber tortilla wraps with 1/4 mozzerella cheese. An awesome wrap within the 200-250 range. Also, make these recipe your own! Add mushrooms, carrots or add some meat.

this sounds very similar to something that i make, i call it ratatoulle. I leave out the tomato paste, but keep the stewed tomatoes, and add mushrooms, and use italian seasoning.
