Healthy spin-off to No Bake Cookies
Hi all, I'm new here but I just wanted to share a recipe that I came up with today. It is a healthy spin off to the traditional no-bake cookie. Not quite as good, but easily satisfies my chocolate fix! Here is the recipe:
1 cup splenda
2 T baking cocoa
1/4 c nonsweetened applesauce
1/4 c skim milk
1 cup quick oats
2 T shredded coconut
Combine splenda, cocoa, applesauce, and milk in a saucepan. Stir continuously and bring to boil. Once boiling, remove from heat and add the oatmeal and coconut. Drop onto wax paper into 8 cookies. Cool until at desired temperature.
Per cookie:
Calories- 52
Carbs- 12
Fat- 1
Protein- 2

ive never heard of no bake cookies! how fab...do they turn out like cookies?0

Most no-bake cookies are made with oats, peanut butter, sugar, butter...all that good stuff. Since it is a no-bake cookie, they are more dense than a normal cookie, but they stick together like a regular cookie would. I'm quite impressed!0

Yes you can taste the coconut, so if you don't like it you can omit it. The no bake cookies that I used to make actually don't have coconut in them, I just added it in these to give it more texture/flavor. Give it a shot without it, I bet they will be just as good!0
