Gluten free, low carb pizza

a friend of mine e mailed me this recipe after i mentioned seeing it around, and it worked so well. you can apparently make bread sticks this way too, but we didn't try.
1 cup cauliflower - steamed, cooled, then shredded
1 egg
1 cup mozzarella
fennel, oregano, & parsley to season.
whatever toppings you would like.
preheat to 450 fahrenheit
after you cook the cauliflower, let it cool, use a cheese grater to shred, measure out a cup - don't pack it down. in a bowl, mix cheese, egg and cauliflower. spray cookie sheet with cooking spray, pat down mixture on the sheet. sprinkle on the fennel, oregano, and parsley.
bake without toppings for 12 - 15, if you double it [which i did] 15 - 20 minutes.
take out, add your sauce, cheese, & whatever toppings. use the broiler feature on the oven, put back in until the cheese is all melted. or you can rebake at 450.
my boyfriend and i doubled it, and we were both SO happy with it! if this has been posted before, sorry. but i think a repost of delicious pizza is okay.

or, just do an egg soufflee for the crust! Cook crust first then add toppings:
6 eggs separated
whip egg whites to stiff peaks foam, fold in 5 scrambled yolks
bake in a thin layer in a cake pan until done
let cool then add your toppings.0
