Anyone know of some delish vegan recipes???

I have one for the most perfect fluffy protein pancakes. I also make a great tofu sweet potato sesame teriyaki wrap.
Protein pancakes:
1 cup flour (white, chickpea, coconut flour, while wheat it doesn’t matter)
1 scoop vegan protein powder
1 tbsp baking powder
1/2 tsp salt
1 cup vegan protein milk ( I use ripple tumeric chai tea milk I found at the dollar store that is amazing)
Mix, pour in pan and flip
Add whatever toppings you want I smear peanut butter on top with banana and drizzle sugar free syrup over it.
Sesame Teriyaki Tofu Sweet potato wrap
4 oz of sweet potato finely chopped
Tofu
Sesame teriyaki dressing
Tortilla
Sauté sweet potato until soft ( I like mine browned a bit)
Add tofu and veggies to the pan if you like, cook together with spices ( I use taco mix, idk why it tastes so good with the sesame dressing but it does)
Add ingredients to flour tortilla, roll and grill.4 -

Had this tonight, it's so good! I used half the chickpeas so I could eat two and used less oil, plus my chili powder is Penzey's medium-hot. I used low carb/calorie tortillas, lettuce, and hot salsa.

Great split pea soup, I used 6 jalepenos and have added barley once and potatoes once, both were good. I have an herb garden so I used fresh where I could.

This was half eaten lol! It looks much nice when it’s just out the oven❤️
Dice one onion and one bell pepper and start to fry them. Whilst they’re cooking, mince 2 cloves of garlic and chilli (just much you like), and dice some courgette and mushrooms into small cubes. When they onion and pepper are soft add all the things you just chopped. Keep frying until softened. Add paella rice (like 150g give or take), a tin of chopped tomatoes, 1/2-3/4 of a pint of veggie stock, salt, pepper and 1tsp turmeric. Add a lid and put it in the oven at 180 degrees C for 45-60 minutes. All the juice is absorbed into the rice and it goes soft.

This is a favourite of mine. I get seitan at the asian supermarket, where it is sold as "buddhist mock meat".

Being a vegetarian I still cook a decent amount of vegan meals. My go to is usually rice and beans of some sort. As of lately I’ve been on a curry kick with sautéed tofu, mushrooms, green onions, broccoli, over rice or rice noodles with the must needed lentils. Rice and beans, easy to make vegan with still a good amount of nutrition depending what you want to add.1
