Pan-Fried Fish
If you have a recipe for pan-fried fish, any fish, that you're so absolutely fond of that you could brag about it, please post it here. I've fried, baked, and barbecued fish and I always go back to pan frying despite the occasional mess. I eat a lot of salmon and catfish, some trout, and typically like to spice it up with panko.

An instant read meat thermometer is a really useful piece of kit, Costs about 10 dollars and takes up as much space as an extra fork in the kitchen drawer. Takes all the guess work out cooking meat and fish. Also useful when BBQ-ing in summer. You can get one on amazon during lockdown.2

If you like really spicy up the siracha, I've only been making salmon this way since trying the recipe.1 -
I always pan-fry my fish as well. I usually do it Teriyaki-style. So I fry them on each side for a bit until they are almost done, then I add a soysauce, mirin and sugar (usually they put sake as well, but I could never find sake in stores so I just omit it) mixture. I simmer the sauce until it thickens. It's soo good.1
