For what exercises - cardio? weights? both?

Stamina's something that builds over time, as you get fitter.
Make each workout challenge you a little, but not to the point of exhaustion. As it gets easier over time (days-weeks-months), then go a little longer, further, faster, heavier; work out more frequently (varying workouts so recovery happens); or change to a more challenging exercise type. Just keep that little bit of challenge in the picture, by pushing yourself just past comfort, but not all the way to exhaustion/misery.
For relative beginners, a common cardio mistake is to start out with high intensity. Limited previous conditioning means they can't sustain that intensity more than briefly. It the goal is stamina, they'd be better served, to start, by milder intensity done for longer time periods. Burns more calories usually, too (may be fewer calories per minute, but more total per session, because they can go longer without getting exhausted).
