Anyone else gluten-free?

I found out a couple of months ago that I have a gluten intolerance and have been gluten-free since then. I'm finding that restriction, on top of trying to lose weight, to be a little bit overwhelming sometimes (not to mention I'm really sick of chicken, rice, veggies, and some kind of sauce...). Anyone else??

I got this recipie from sparkrecipies.com, very very good website. I'm not gluten free but I often eat gluten free foods because I like them (crazy huh) anyway I'm pretty sure quinoa is gluten free, just don't quote me on it. Enjoy
QUINOA TABOULEH
Ingredients
Quinoa 1 cup, dry
Tomatoes, 2 cup, chopped or sliced
Parsley, 1 cup, chopped
Juice of half a lemon
Salt & Pepper to taste
Red Onion, raw, 1/4cup, chopped
Olive oil 2 tablespoon
Directions
Rinse quinoa well in cold water.
Add quinoa to 1.5 c fresh water. Bring to a boil, reduce heat, cover and cook 15 minutes. Leave cover on and let set 5 minutes.
Finely chop onion, parsley, and tomatoes. Mix in large bowl, set aside.
Juice half a lemon, add lemon zest if desired. Add olive oil, salt and pepper. Whisk to mix and pour over onion, parsley & tomato mixture.
Add cooked quinoa and chill before serving. Serve with hummus, pita and olives.
Makes 4 1.25-cup servings.

Blessings on your journey! It is an adjustment to be sure, but it's possible and I will tell you - soooo worth it! I've been gluten-free for over a year and feel amazing! (for the record, I'm also gluten intolerant, not celiac)
It can be overwhelming, expensive, and very, very tiring - but over time, you learn to have a different relationship with food and this site is a big help.
My food diary is open - as humiliating as that is sometimes - to assist other gluten-free eaters with meal ideas, etc. I usually stick to my time honored favorites, and really should eat more fruits and veggies, but I'll get there eventually.
One of the biggest helps to me in terms of losing weight while cutting out the gluten is to not try to find a GF substitute for everything you're craving (bagels, cookies, breads, etc) They are, many times, just as fattening - if not more- than their gluten counterparts, so if you can do without I would encourage you to do this. I promise, after a while, you won't need a bun for your hotdog or cheeseburger, turkey, ham and cheese taste just as good without bread, and your pocket book will not mind cutting those out either.
