This weekend as I was out on the deck st the cabin talking with kel_be about the future I brought up about opening a restaurant again but changing it from being a brewpub to a healthy restaurant. I have changed my point of view to eating better and looking at my choices at restaurants even there so called healthy choices are not that healthy . She said it would be Tunstall of a market but I said that everyone here would go.
The premise is basically a farm to table and ingredient replacement. I have made some killer dishes and try to find a way to change to a different ingredient to lower the calories

I guess my question would be would you guys and girls go for a restaurant like this. I know we have a hard time finding places to eat out we basically only go for the sizzles salad bar

    YES, YES, YES....that is what is needed now more than ever....healthy food resturant with only healthy choices!!! But, real food....not "rabbit" food...you know what I mean?

    Asking this on a site like this will get you an overwhelmingly positive response. I would certainly go to a place like that. However, I know very few, if any, people in my daily life who would.

    I actually used to go to a resturant like this in Savannah GA when we lived in that area. It was fantastic. They had their produce delivered fresh daily and everything was healthy but you would never know it by the taste. It's been the only one like it that I've found between four states on the east coast. I wish I could find something like this where I live now.

    I think it is an AWESOME IDEA!!!! I think it would go over so well no matter where you are at!!! Good luck to you and don't ever stop dreaming........I have been taught that you can do or be anything you want to be!!!!!

    I would go but it would have to be priced similiar to a Apple Bees or Red Robin. It seems that the healthier restaurants are expensive.

    Absolutely it would work! I have dreamed of a place like this in the midst of meat-and-potatoes-ville. Just be sure to include some vegan dishes for your veg friends!

    Do some market analysis before you invest into this business. It's a great idea but look at who you are sampling in this website. This crowd may not be an accurate representation of your typical customer or client base in your community. All the best in your future.

    It could definitely work. There are so many ways to re-invent greasy spoon favorites and still put out "killer" tasting dishes and still be reasonably priced. I've written three menu's over the years and the last one was for my dream to open a grill/smoker dive combining some of my classical training with my love of smoking meats. I've been readjusting the recipes to make them more healthy and they are coming out great with good reviews from friends. Do a little market analysis, but you are on the right track and you can do it so it's affordable too. I'd eat there. There are a couple of great little health friendly dives in Tucson and they are hopping. Good luck and Dream big!

    I think there are a lot of variables to consider with a restaurant catering to healthy eaters. Personally, I probably wouldn't go there any more than I go to regular restaurants because I prefer to cook and eat at home. Also, if it were way more expensive, I would probably choose somewhere cheaper where I could get an "okay" meal.

    FWIW, there are some restaurants around the Denver area that specialize in fresh, wholesome ingredients, and also serve rare and unique craft beers. I think hitting an equally food-conscious market like the craft beer crowd might help out - people that are already interested in delicious, well-made drinks are way more likely to want delicious and well-made food.

    I also think it's an awesome idea, but don't agree that it will go over well no matter where you live. As someone else said, you should really do a market analysis. I live in a very active, outdoorsy ski resort town. We had a donut shop move in here last winter and it lasted about 6 months. You'd think most people eat donuts...well, healthy-minded people don't...at least they don't eat them enough to keep a donut shop in business.

    On the other hand, we have two restaurants like the one you're talking about starting and they do great....but there is huge overheard in organic, fresh ingredients, so the profit margin is relatively small...not to mention, it's a tremendous amount of work. My mom owns an organic deli and catering company and she's ready to drop every night she gets home...and though she loves it, she'd sell it in a heartbeat because it's back-breaking work.

    Healthy food can be as delicious and much more satisfying than deep fried, butter filled calorie busters. I go to restaurants that allow me to stay on the healthy side of life. I look for healthy alternatives in main stream restaurants. Many do offer meals 400-500 calories total so there is a demand there.

    One other thing, I ate lots in Italy including bread but lost weight due to walking. Thing is I never considered anything "diet" food but it is fresh, no processing meat and all natural items. Processed foods are the devils of today's menus

    Not really - not in the scheme of things - not when you're buying bulk. Processed food also lasts longer.

    yes healthy food choices would be great and most people on this website are going to want this - l actually would love the calories on the menu so l can make an informed choice, even if it was on a separate sheet hidden in the back of the menu so not to scare some people??

    Yes, when you buy in bulk. I do research for food processing companies, i.e. Del Monte, Kraft Foods. etc. Some processors buy their fresh produce for under $100/short ton (2,000 lbs.) Are you going to be able to utilize that much product before it spoils?
