Fresh Green Beans

What is your favorite thing to do with them?

I love green beans so much, but only fresh or frozen nowadays (the canned ones gross me out now unless they're in green bean casserole). I like making them szechuan style, or with a little butter and some garlic.

    :smile: I saute the fresh beans in 2 tsp olive oil with chopped shallots and minced garlic, then I add 1 tbsp chopped walnutsand 1/2 tsp sesame seed. Delish!!!
  • That sounds so good! I would love to find more things to do with green beans. I love to get them in a restaurant, but I never know what to do with them at home.

    I love them the same, fresh and def not canned. I sautee in garlic salt and pepper, sometimes a litle olive oil or olive oil spray.

    Balsamic Green Beans with Fennel

    Prep Time:20 min
    Start to Finish:20 min

    makes:4 servings (about 3/4 cup each)

    2 teaspoons olive or canola oil
    1 medium fennel bulb, cut into thin wedges
    1 small onion, cut into thin wedges
    2 cups Green Giant Select® frozen whole green beans
    1/4 cup water
    2 teaspoons packed brown sugar
    1/4 teaspoon salt
    1/4 teaspoon freshly ground black pepper
    1 tablespoon balsamic vinegar

    1. In 12-inch nonstick skillet, heat oil over medium heat. Add fennel bulb and onion; cook 7 to 8 minutes, stirring frequently, until fennel is light golden brown.
    2. Add beans and water; heat to boiling. Stir; reduce heat to low. Cover; simmer 6 to 8 minutes or until beans are crisp-tender.
    3. Stir in remaining ingredients; cook and stir 15 to 30 seconds longer or until vegetables are coated.

    I love fresh green beans. For me, the sign of a *really* good restaurant is if a) they serve fresh green beans, and b) they are cooked just enough, not overdone.

    Someone mentioned walnuts. Also slivered almonds are great.

    Can't omit the classic : green beans with bacon. A small amount of bacon doesn't add too many calories, and it is such a yummy combo !

    I saw, but haven't tried, a recipe where you wrap fresh green beans and a piece of Salmon in a foil pouch and cook it in the oven. Intriguing, but I'm kind of afraid the beans might lose that contest and come out fishy.

    I like to steam fresh green beans, then heat a tiny bit of olive oil in a skillet, put in the beans and toss on a couple of tablespoons of grated parmesan, stirring until the parmesan is golden brown.

    I go to the farmer's market and get Jade or Tenderettes. Tenderettes I season with sea salt only, Jade I eat plain with nothing and they are great. Half white runners I try not to eat they need a lot of seasonings
