Cooking Challenge: Olives

Welcome to the forty-sixth round of the cooking challenge! This week's ingredient comes to us from metal_beau, the winner of the eggplant cooking challenge.
This week's challenge is OLIVES.
These are the rules for the challenge:
1. You don't need to have created the recipe from scratch, but you DO need to make it.
2. Voting will be put up for the challenge and the winner of the challenge will pick the next ingredient to be used.
3. Pictures are encouraged but not required. If you want to post a picture upload it on a website like photobucket.com or tinypic.com . If there's any questions about how to do that, don't be shy to ask me.

Mediterranean Omelet:
Calories 278 : Protein 32g : Carbohydrates 14g : Fat : 10g : Servings 1
Egg whites 5 and 1 whole egg
President Fat Free Feta 1 oz
Kalamata Olives 5
Green Olives 5
Roma Tomato ½
This omelet is an explosion of taste in the morning. Mid way thru eating it you start to appreciate the complexity of flavors and textures.
Directions:
Use 5 egg whites and 1 whole egg and mix slightly.
Turn heat to medium and warm the pan for two minutes.
Pour eggs into pan and cover. Keep an eye on eggs and pop any large bubbles.
Cut olives, tomatoes and measure the feta.
The eggs should be solidifying by now. Do not flip until the bottom of the eggs turn very slightly brown. A bit more brown is OK too. Slid a spatula under the edge and circle the omelet to release it from the pan. Slide the spatula all the way under the egg, but slightly to the right. (If right handed) Tilt the pan and slide the omelet and loosen it completely from the pan and flip.
Add olives, cheese and fold omelet. Put the top back on. Wait 1 minute and flip omelet to other side. Wait 30 seconds and slide to plate with spatula. Top with Roma Tomato.

I'm back with my recipe containing OLIVES
Chicken Cacciatore
Fry Lite Spray
8 boneless chicken thighs (without skin)
2 garlic cloves, crushed.
tsp dried thyme
tsp dried tarragon
1/4 pint white wine.
400g chopped tomatoes
12 pitted black olives
12 capers, rinsed thoroughly and drained.
Brown Rice (to serve)
Any vegetables (to serve).
....
Fry the chicken in the fry lite, over a high heat (in a casserole dish)
Reduce the heat & add the garlic, thyme, tarragon and wine.
Stir.
Add tomatoes and season
Bring to the boil & the reduce the heat.
Simmer for 20mins, until the chicken is tender.
Remove the chicken and let the sauce bubble until thickened.
Add the olives and capers, stir well.
Cook for a further 3 minutes.
Put the chicken back into the casserole.
Serve with brown rice and your choice of vegetables.

(this is an amazing recipe if you are watching your carbs and can burn fat off easily through working out).0 -
Little appetizers/ mini snack bites.
Take 10-12 pimento stuffed olives.
Chop them roughly.
Stir into some cream cheese (low fat if you like, or the full fat version, you don't need much.) About 1/3-1/2 tub, say 100g)
Add a little milk to soften the consistency.
Pile into the cavity of celery sticks.
Cut into bite size pieces.
Serves 2

NAME OF RECIPE: Spicy Chicken Spaghetti
INGREDIENTS:
3 tbsp olive oil
6 boneless skinless chicken breasts
salt and pepper, to taste
24 oz spaghetti sauce with mushrooms
1 can petite diced tomatoes
1 red bell pepper, diced
4 jalapenos, diced
1 10-oz can sliced black olives
2 cups frozen corn
1 1/2 tsp garlic powder
1 1/2 tsp onion powder
1 1/2 tsp ground black pepper
16-oz spaghetti noodles
DIRECTIONS:
1. Heat the olive oil in a skillet. Once the oil is hot add the chicken and season with salt and pepper. Cook until the juices run clear.
2. In a saucepan add the pasta sauce, tomatoes, red bell pepper, jalapenos, black olives, and corn. Bring to a boil. Once boiling season with garlic powder, onion powder, and ground black pepper. Add the chicken and cover and simmer for 15 minutes.
3. Cook the pasta according to the package directions. Drain.
4. Toss the pasta with the sauce.
CALORIES PER SERVING: 393 calories
HOW MANY IT SERVES: 8
OPINIONS ON HOW IT TASTED, ETC: I felt like this was SO much food for only being 393 calories. The sauce was rather simple to make, but was bursting with flavor. I really enjoyed this meal (which I served with a light version of a green bean casserole). It wasn't overwhelmingly spicy, but it did have a kick!

This is my homage to mediterranean style cuisine. I hope you like it
Olive and feta stuffed Sole Filets topped with fire roasted tomato sauce.
Ingredients:
1 lb Sole filets
20 kalamata olives pitted and diced
10 Spanish olives pitted and diced
1/2 med red onion small diced (divide in half)
1 yellow bell pepper small diced (divide in half)
1/4 cup balsamic vinegar reduced by half (divided in half)
2 oz lite feta cheese (crumbled)
3 cloves garlic (minced)
1/4 cup white wine
1/2 tsp dried oregano
1.5 cup diced fire roasted tomatoes
2 tsp olive oil
salt and pepper to taste.
Make ahead.
Combine olives, feta 1/2 of pepper, onions and vinegar reduction. Toss together and refrigerate
Preheat oven to 350 degrees
Slice each sole filet laterally until you can open it like a book, leaving one side still attatched.
Next, pull olive mixture from fridge and layer olive mixture on bottom portion of filet. Close top portion of filet over olive mixture.
Spray shallow baking pan with cooking spray and place filets inside making sure they dont touch.
Bake at 350 for approximately 25 min or until fish is opaque and flakey.
For sauce: ( You can make this while fish is baking.)
Heat olive oil in skillet over medium high heat. Add other half onion and pepper and saute until translucent. Add garlic and saute until garlic browns but does not burn (garlic will be bitter). Add wine to deglaze pan and reduce by 2/3. Next add tomatoes and cook till heated through.
Drizzle plates with rest of balsamic reduction, lay filets on plate and top with tomato sauce. Garnish with fresh oregano.
Last but not least. ENJOY

Grilled Antipasto Pizza
Prep Time:30 min
Start to Finish:30 min
makes:8 servings
1/3 lb small whole mushrooms (2 cups)
2 medium yellow bell peppers, cut into 16 pieces
1/4 cup fat-free Italian dressing
1 package (14 oz) prebaked original Italian pizza crust (12 inch)
2/3 cup shredded, partially skimmed mozzarella cheese (3 oz)
3 plum (Roma) tomatoes, thinly sliced
8 medium green onions, sliced (1/2 cup)
1/4 cup sliced ripe olives
1. Heat gas or charcoal grill. In medium bowl, toss mushrooms, bell pepper and 2 tablespoons of the dressing. Place vegetables in grill basket (grill “wok”).
2. Place grill basket on grill over medium heat. Cover grill; cook 4 to 6 minutes, shaking grill basket to turn vegetables occasionally, until bell pepper is crisp-tender. Coarsely chop vegetables.
3. Brush pizza crust with remaining 2 tablespoons dressing. Sprinkle with 1/3 cup of the cheese. Arrange tomatoes on cheese. Top with grilled vegetables, onions, olives and remaining 1/3 cup cheese.
4. Place pizza directly on grill over medium heat. Cover grill; cook 8 to 10 minutes or until crust is crisp and cheese is melted.

I'm sure this can be easy be done in your oven and stove top too. Just follow the pizza dough directions for baking and saute your veggies instead.0 -
