I love an acorn squash, My favorite thing to do with it is
Cut it in half also cut off a little of the bottom so it's flat when you set it upright like a bowl it doesn't roll around, spray with evoo
put face down on a baking sheet at 375 degrees in the oven till it is cooked through about 20 minutes, a fork should poke right through it
Then I cook and mix (all of these are optional and interchangeable) Brown rice, a little cheese, corn or mixed vegetables, chicken (i don't eat poultry so I use quorn chicken), a little stuffing. Once the bowls are cooked through, flip them over pack in your mix and it should be a little sticky so you can mound it on the top, then bake a little more just to heat them through and melt the cheese and voila healthy very yummy.

I LOVE acorn squash! I've never had it stuffed so I'll definitely have to try this. I usually roast it with some butter and brown sugar0

LOVE acorn squash... I don't love my oven, though, so instead of baking I usually cut it in half, put a little water or butter in the hollow, cover it tightly with plastic wrap and microwave 4-6 minutes. It steam-cooks it nice & quickly.

AH! I made acorn squash two nights in a row...I love it so much
