Low Cal Easy Dinners

I hate cooking. Hate is a strong word, I shouldn't say that. I VERY much dislike cooking. I don't like standing there waiting for for food to cook and scrubbing and cleaning a million things when I'm done.

That said, I need to start cooking more. Does anybody know so simple easy recipes for food that is flavorful and can store easily so I can make a couple lunches and dinners at once. Or know a good site where I can find some?

    I'm eating leftovers of a great meal right now! So easy - 4 chicken breasts, a tiny little bit of salt, some pepper, teaspoon of minced garlic, 1/4 c. of lime juice, 1/4 c. chopped cilantro, and a 1/4 c. of light beer in a crockpot. Cook on high for 3 hours. Serve that way with sides or chop up for quick easy fajitas or wraps. Very little chopping or cooking required. It's only about 170 calories a serving. Cook on the weekend and package up lunches or dinners. If you have a large crockpot you can easily double the ingredients above, I did that. Corn or whole grain tortillas, the chopped up chicken, and salsa is all you need. I like to chop and sautee onions and peppers to go with, but that is not necessary.

    make a soup- yes it takes some prep, but then you have like a dozen meals ready to go. And you can "beef it up" with things like quinoa, orzo, mixed beans etc.

    I love to cook, but hate the cleanup. I need a dishes-fairy.

    Try browsing the spice aisle of your grocery store for spice blends and use them as rubs. They're a quick, great way to add low-cal flavor to chicken, fish, veggies.

    Frozen veggies are a great quick option - minutes in the microwave - no cleaning or chopping.

    I also tend to cook a lot at once and make pre-portioned containers of leftovers for quick lunches or dinners later in the week.

    Oh - and I make lemon-pepper chicken breasts about every two weeks. It's zesty enough to be flavorful on its own with side dishes, and/or the chicken can be cut up for salads, pasta, fajitas, or chicken salad. Yum!

    Stir fries are my favorite go-to quick and easy meal. One pan, one knife, endless possibilities. Some others that are quick and easy:

    Bean burritoes - salsa and/or guacamole, low-sodium canned refried beans, low fat cheese (onion, jalapeno, etc. if desired) in a low carb wrap. (you could also buy those precooked chicken breasts and add those or substitute for the beans).

    Beans and rice - use low sodium canned beans and instant brown rice and this can be ready in 10 min. in one pan.

    Any fish and almost any quick cooking vegetable(s) (carrots, asparagus, broccoli, leeks, greens, etc.) - seer together in olive oil in same pan for 2-3 min per side, or on George Foreman type grill if you have one.

    Not always quick, but super easy is soups or stews - again just one pan and one knife for prep and endless possibilities
