Anybody want to share "What they Eat in A Day"

I have been diagnosed with 2b/3 CKD. I use to work out 7 hours a day seven days a week. Taking all types of supplements( that I thought I needed) because I also struggled with eating disorder. This persisted for years. Lifting , running. It increased by Creatine. Now I work out 4 days a week. No longer doing HITT and no longer lifting heavy weights.
I am also vegetarian .

Now I am trying to reverse the stage , though I am aware the damage is irreconcilable.

Sample breakfast
1/2 cup lowfat, low sodium cottage cheese
1 small gala apple chopped
1 cup organic blueberries
1/2 cup organic raspberries
1/2 cup organic blackberries
1/4 cup unsalted organic pumpkin seeds
1 tsp cinnamon
water, water, water

Sample lunch
6 cups organic baby spring mix
1 gala apple chopped
1/4 teaspoon feta cheese
1/4 cup pumpkin seeds
2 tablespoon "Little salad Bar Apple Thyme Vinaigrette"
1 tb Organic Terradylessia Olive Oil
13 unseeded red grapes

Snack
10 baby carrots
1/2 slice red peppers

Dinner
1 cup Libby no salt no sugar added corn
1/2 organic no salt chick peas
1 whole cucumber
chopped red onion
1/2 red pepper diced
4 cup baby spring mix
1 tb Organic Terradylessia Olive Oil
1 tsp white wine vinegar
lemon

Snack
1 or 2 Veggie Made Great Blueberry Oat Muffin

Anyone else? Of course this varies

I am cat 3 sometimes 4 CKD caused by an autoimmune disease. I try to follow a vegan diet, depending on how lazy I am about cooking.

Breakfast is oatmeal, shredded wheat or Dr Sams cereal with almond milk, banana & sometimes blueberries.
Lunch is a homemade lentil patty on a wrap or salad or homemade veggie/bean soup. Sometimes Dr Praegers burgers.
Dinner varies: lots of veggies, protein is beans, lentils, tofu. I make homemade soups, tomato sauce and salad dressings. I try to limit pasta. Explore Cuisine organic edamame & mung bean fettuccine is a new product I like - it has 24g protein per serving.
I drink tea with soy milk. I'm having trouble giving up cappuccino & latte with cow milk.
Snacks are fresh fruit, sometimes English muffins. I confess to not checking ingredients on breads, but I try for whole grains. I try to limit sugar treats & I want a high fiber diet.

The docs don't have me on a special diet except to watch my weight & sugar, because of prednisone I am borderline pre-diabetic.
