Taking lunch to work

Now winter is here in struggling what to eat, I work outside in the cold and have no warming up facilities, I have a flask what I put chicken and rice in as it’s easy and does not dry out
Any ideas what I could have and get some veg in it

Beef and potato stew?
If you have access to a 120V outlet, these are great to warm up stuff in plastic containers. I use one in my truck bc I'm often on the road. Takes about 45 mins, but...

Could you make a soup with plenty of veggies, lentils etc?2

I'd also suggest a stew or soup. Chicken, potato and veg would work in both. Lamb or beef stew with diced potatoes. Can you not add chopped veg to your chicken & rice? Depending on how wide the neck of your flask is, chicken, pasta and veg in a tomato-based sauce.1

I have a small campstove...easy, cheap ($25-$35,) one burner. That would be a great option.

I often prep a pot of chicken or lentil/bean soup full of veggies. Basically whatever vegetables I have in the fridge. This week was 15 bean mix, kale, tomato, dried vegetable soup mix, carrot, and zucchini.0

No, soups and stews do not dry out and even freeze well. So if you wanted variety, you could make different soups and stews in advance, portion them out, freeze them, and defrost them the day before you want them for lunch.
If your flask's mouth is around 2" wide, a canning funnel will make it easier to fill.
This one has a 2.5" opening - the one I bought in Walmart was 2".

Curry! You can use a lot of veg in curry, especially if you chop it small, and the heat will be extra warming on a cold day.3

My go to lunch for work in winter is chili. A little meat goes a long way. I use tons of veggies and some beans and either ground turkey or beef. Sriracha and some avocado, good to go!0

Maybe you can make pasta with lot's of veggies and chicken? I eat cold left over pasta the next day for lunch and it always still tastes great.1
