Coronation Egg Salad Sandwiches

Ingredients
6 Eggs older eggs are better for hard boiling as the shells slide off easily
4 slices of Bread of your choice
1/2 onion chopped finely
1 stick celery finely chopped
1 handful raisins
1-2 tablespoon mayo
1 teaspoon mango chutney
1/4 to 1/2 a tsp of curry powder
A large pinch of Sea Salt
Pepper

Directions
Hard-boil your eggs (10 mins), rinse under cold water (to stop the egg yolk turning grey), and shell.
Mash or chunk up the eggs as you like them
Add in the other ingredients
Balance out the different flavors until it all makes your taste buds happy.
Make sure there is just enough mayo and chutney in to bind it together and flavour with out making the sandwich runny.

    thats an interesting version of an egg salad

    age of eggs doesn't matter. if you're buying them from a store, they are already pretty darn old. if you get them fresh (we have a farm), age CAN matter BUT if you boil with a bit of salt and baking soda, the eggs will peel pretty easy, even if they were laid that day.

    Coronation turkey sandwiches is a great way of using up Xmas leftovers. Partly because the curry and chutney make it tast nothing like Xmas. Just used chopped turkey instead of the egg.

    Sounds good! For my taste, using plain Greek yogurt rather than mayo in things like this makes zero difference in taste, saves a couple calories.

    Agreed, Plus I'll also throw in that if they're a little difficult at first, running a spoon under the shell makes peeling very easy!

    I've also subbed avocado for mayo; I think it's pretty yummy. Green Eggs (no Ham)!
